I’m on a health kick at the moment, as I’m in a bit of a time crunch to get swimsuit-ready before our upcoming trip to Montauk. With warm weather coming so late this year, I feel like the summer season sort of snuck up on me. But after just a few short days of eating healthy and working out, my mind wanders and I inevitably start to daydream about pies, pasta and other delicious carbs. So what’s a girl I do?
Over the years I’ve realized that for me it’s crucial to find balance by having healthy desserts on-hand. Just a few bites of a sweet treat can satisfy my cravings and get me back on track. These peanut butter chocolate chip bites are my current favorite for a guilt-free after dinner snack. Give them a try and let me know what you think!
the recipe: vegan peanut butter chocolate chip bites
- 1 1/2 cups rolled oats
- 1/4 cup agave
- 2 tablespoons coconut oil
- 2 tablespoons peanut butter
- 1 tablespoons almond extract
- 1/2 cup almond flour
- 1/4 teaspoon sea salt
- 2 tablespoons dark chocolate chips
- Blend oats in a high-speed blender until a fine flour forms.
- Combine agave, coconut oil, peanut butter and almond extract in a large bowl and mix with hand mixer until smooth.
- Add oat flour, almond flour and salt, and beat until combined.
- Fold in chocolate chips.
- Roll the dough into small balls and freeze for 5-10 minutes. Store in the refrigerator until dessert cravings inevitably strike.
Tasty treats and swimsuit season don’t usually mix well but i love the tips and the recipe! Will definitely be making this for Memorial day weekend
