We’ve all been there before. It’s the end of a hectic day at the office and a friend or two are planning to come over for an easy weeknight dinner. You’ve prepared essentially nothing and the time is nigh to pull a spread together. Enter: my favorite quinoa salad recipe and cucumber-infused gin cocktail. There’s nothing better than recipes that present themselves to be chic and well thought out, but in actuality are very simple to prepare. The Cocktail
This is quite literally the most fancy presentation for the easiest cocktail I’ve ever made. Muddle cucumbers into a couple cups of gin at least 12 hours before your gathering, and then simply mix with grapefruit soda when your guests arrive. Add a splash of lime. Done and done.
The Dish
I happened upon this salad recipe when I was searching for new ways to prepare quinoa for lunch on the go. It’s a mixture of vegetables and quinoa with a delicious peanut-thai dressing we literally cannot get enough of. The only alterations I made were adding sautéed chicken and holding the edamame, only because the Whole Foods near my apartment was sold out of the bags of shelled beans. Obvs, I’m too lazy to peel them myself.
One Last Thing
Just sit back and enjoy! I’ve found that the best way to be a great host is to be the least stressed as possible. If you get in a crunch, skip the cooking and order take out. The point is to enjoy each other’s company anyways. Some of my most memorable nights have been spent over delivery pizza and wine. Bon appetite!
